Unique Chicken Biryani Recipe

Biryani is also known as Biriyani , biriani , birani or briyani . The dish is especially popular throughout the Indian subcontinent. Biryani made with Indian spices , Rice , Meat like chicken , mutton , beef , prawns and fish. And also with Vegetables and Eggs .

Today I'm going to show how to make  Chicken Biryani. This Delicious Recipe belongs to my Sister Tasneem Malladi .





Ingredients : 

For Chicken Marination :

1 & 1/2 kg chicken 
500 ml Buttermilk ( chaas )  
2 tbsp Curd ( Dahi ) 
2 tbsp Kashmiri red chilly powder ( mild )
1/2 tbsp salt Or as per taste 
1/4 tbsp tumeric powder

For Biryani Gravy : 

1/2 kg oil for Frying onion 
1 kg  Onion   
1kg tomato 
4 tbsp oil for gravy 
Green paste ( 2 tbsp gg paste+ 3 to 4 green chillies+ handfull mint leaves + hand full coriander leaves ) 
1/2 tbsp Cumin powder 
1/2 tbsp Coriander powder 
1/2 tsp suger 
1tbsp Salt or as per taste 
1/2 tbsp Garam Masala powder 
Indian spices ( green cardamom , black cardamom , cinnamon sticks , cumin seeds, black pepper , bay leaf , star anise ) 
2 tbsp or as per taste Chilly powder 

For Biryani Rice : 

2 kg Basmati Biryani rice 
Water as required for boiling 
2 tbsp or as per taste Salt 
3 tbsp lemon juice 

For Biryani topping : 

Lemon juice of 4 lemons 
Birista 
Chopped coriander leaves 
Chopped mint leaves 
3 tbsp hot oil 
1/2 cup milk + orange food colour mix 

For Garnishing :

Tomato flower 
Birista 
Chopped coriander leaves 
Chopped mint leaves 


How to make : 

1. In bowl take butter milk add curd in it mix well. Now add washed chicken pieces in it then add salt, chilly powder , tumeric powder mix all very well keep it in fridge for 12 hr or  overnight . 

2. After 12 hr Soak the Rice in water for 2 hr.

3. Heat the oil in pan add sliced onion fry it till birista is ready. 

4. Untill then make the green paste. In Mixy jar add gg paste , green chillies , coriander leaves and mint leaves add some butter milk from marination then grind all make fine paste. 

5. Now take out the marinated chicken . Add green paste , tumeric powder , coriander powder , cumin powder , suger and garam masala powder mix very well keep aside.

6. In pan or kadai add oil when oil is heated add dried Indian spices fry for 1 min now add onion birista ( take out some birista for topping and garnishing ) , chopped tomatoes mix well cook for 5 min on medium flame. Now add marinated chicken mix well add chilly powder and salt as per taste mix well close lid cook for 5 min on medium heat. Open lid cook till all water reduced from it on medium flame then switch off the flame. 

7. Now In big vessel add water then add the salt and lemon juice mix well boil it. When water is start boiling add soaked rice cook it 50 percent then drain the water from it. 

8. Now it's topping time . In big vessel spread half rice, on rice spread gravy add birista  chopped coriander leaves and mint leaves on it and sprinkle half lemon juice  . 
Now spread another rice part then spread birista chopped leaves , lemon juice , hot oil and milk . Close the lid and cook till Biryani cooked very well. 

9. For Garnishing take out the Biryani in plate spread birista and leaves on top . Keep tomato flower on top serve hot.

Chicken Barrah Recipe

Chicken Barrah is very delicious yummy
dish derived from Mughlai Cuisine. Barrah is one type of grilled kabab .



Prep time : 2hr
Cooking time : 30 min 
Total time : 2 hr 30 min 
Serving for : 4 to 5 

Ingredients : 

For Barrah: 

1 kg chicken
1 tbsp lemon juice
1 tbsp butter or oil
2 medium size fried onion paste
1 tbsp ginger garlic paste
1 handful coriander leaves +2-3 green chillies paste
1 cup yogurt
1 tbsp chat Masala powder
1/2 tbsp salt or as per taste
1 tbsp kashmiri red chilly powder ( mild )
1/2 tbsp garam masala powder
1/2 tbsp cumin powder
1/2 tbsp Amchur powder 
1/4 tsp food colour
3tbsp oil

For gravy : 

5  medium size tomatoes paste
2 medium size fried onions paste
4 tbsp fresh cream or malai
2 tbsp cashews + almonds paste
1/2 tsp salt or as per taste
1/2 tsp red chilly powder
1/2 tsp Kasuri methi
1/3 tsp cumin powder
1/2tsp Amchur powder
1 /2 tsp Chat masala powder
1/3 tsp garam masala powder
1 pinch food colour
2 tbsp oil + 1 tbsp butter
Water as required 
Coal for smoky flavour 

How to make : 

1. First make all pastes and keep aside . Like fried onions paste , coriander leaves+ 
green chilly paste , tomato paste , cashews+almond paste and ginger garlic paste.

2. Wash and clean the chicken add all Barrah ingredients in it except oil . Mix well and keep in fridge for 2 hr ( you can also keep it overnight in fridge ) . 

3. After 2 hr add oil in pan when it's heating add marinated chicken in it . Close the lid and Cook till all water removed. 

4. Heat the rack and grilled the chicken in it. And keep aside.

5. After that add oil + butter in vessel . Add gg paste and fry for 2 min . Now add tomato paste and remaining fried onion paste mix well cook for 2 to 3 min on medium flame.

6. Now add all masala powders except Kasuri methi mix well untill then add fresh cream and cashew paste mix well cook for 3 min .

7. Now add Kasuri methi and Chicken Barrah mix well . Add water as required mix well and cook for 5 min low to medium heat. 

8. Side by side heat the coal . Keep the coal plate on gravy add some oil in it.  When smoke is coming out close lid for 15 min. After that remove the plate and close the lid till serve.

* If you want to make your Barrah more tasty then keep it in fridge for overnight.
