Indian Style Pasta

Indian style pasta 

Pasta is a staple food of traditional Italian cuisine. pasta has so many varieties in it, like lasagne, spaghetti, macaroni, tagliatelle, linguine, orzo, penne pasta etc.
Today I'm going to prepare macaroni pasta with Indian style.




Prepare time: 5 to 7 min
Cook time: 15 to 20 min
Total time: 25 to 27 min
Serving for : 3 to 4

Ingredients : 

For boiling pasta :

Macaroni pasta- 1 cup 
Water-1 glass or as required 
Oil-1 tbsp 
Salt- 1tbsp 
Vinegar or lemon juice- 1tsp 

Other ingredients :

Oil - 1 tbsp 
Cumin seed -1 tsp 
Garlic chopped - 5 to 6 cloves 
Ginger chopped - 1-inch piece 
Curry leaves - hand full 
Onion chopped  - 1nos 
Tomato chopped - 1nos
Green capsicum sliced  - 1 nos 
Red chilly powder - 1 tbsp 
Salt -1/4 tbsp
Tomato ketchup - 3 tbsp 
Black pepper powder - 1 Tsp
Roasted and crushed kasuri methi - 1 tbsp
Homemade mayonnaise - 1 bowl or half cup
Coriander leaves - for garnishing.


How to make : 

In a pan add water, salt, oil and vinegar boil it.

Add pasta and till pasta is soft.

When it's done take out in a bowl.

In a pan add oil when oil is heating add cumin seed, chopped ginger and chopped garlic.

Add curry leaves fry for 2 min.

Add chopped onion fry for 2 min.

Add chopped tomato and sliced capsicum fry for 2 min.

Add salt and red chilly powder and fry for 2 min.
               

Now add tomato ketchup mix well.

Now add pasta mix very well 

Sprinkle the black pepper pwdr on it . 

Now add kasuri methi mix very well.


At last add mayonnaise mix well cook for 5 min then switch off the gas. 

Serve delicious pasta garnish with coriander leaves.

Mutton Pickle ( Gosht Ka Achar ) Recipe

Mutton pickle or Gosht ka Achar is very yummy and mouth watering pickle make it and keep in airtight container then keep in fridge it is good in condition for 6months.. 
Let's start making it.





Ingredients : 
Mutton clean and washed - 1 kg 
Lemon -  10 to 12
Ginger garlic paste - 2 tsp 
Chilly powder - 1/2 cup + 5tbsp 
Tumeric powder - 1tsp 
Garam masala - 2 tsp
Salt - 5 tsp

For Pickle masala:
Cumin seed (Zeera)- 2 tsp
Kalonji - 2 tsp
Coriander powder - 2 tsp 

Other ingredients :
Oil  - 600 ml 
Dry red chilly - 6 to 8
Garlic chopped  - 20 to 25 cloves 
Curry leaves - hand full
Cumin seed - 1 & 1/2 tsp
Kalonji - 1/2 tsp


How to make :

Cut the mutton in small pieces .

   Add the juice of 4 lemons keep in fridge for atleast  2 to 3 hr.

Add 2 tsp ginger garlic paste, 2 tsp chilly powder, 2 tsp salt , 1 tsp turmeric powder, 1 tsp garam masala powder.

Mix well keep on gas flame close lid cook it on medium heat for 30 min or till water reduce from it .

Untill then Dry roast the cumin seed and kalonji for pickle masala.

Add roasted cumin seed and kalonji in mixy jaar then add 2 tsp coriander powder in it . grind it till fine pickle masala powder is ready. 

Water is reduced from mutton now take out it in bowl and keep aside .


      Heat the 600 ml oil in pan .

When oil is heated add 1 & 1/2 tsp cumin seed and  1/2 tsp kalonji in it fry for 1 min.

Now add dry Red chilly in it fry for 2 min.

After that add chopped garlic cloves and curry leave fry for 2 min.

Now add mutton pieces and fry for 5 to 7 min on medium flame. Then switch off the gas flame.

Now add remaining 3 tsp salt.

           Add grinded Pickle masala.

Add 1 tsp garam masala.

Add 1/2 cup + 3 tbsp chilly powder.

Mix all very well. let it cool down completely.


After that add juice of 6 to 8 lemons. Mix very well take out in an airtight container.
Keep it in the fridge. It is good in condition for 6 months.

Veg Mayonnaise

Veg Mayonnaise 

Mayonnaise is specially used for spread on sandwiches ,burgers  , rolls and frankies you can also  use it for pasta making . 
you can also make nonveg mayo just use an egg instead of milk. today I'm going to show you how to make veg mayonnaise.




Ingredients

Cold Milk - 1/4cup
Sugar - 1/4 tbsp
Salt - 1/2 tsp 
Oil - 4 tbsp
Vinegar or lemon juice - 1/2tsp
Black pepper pwdr pinch off


Description

Add all ingredients in mixy jaar,  grind till thick mayo is ready . pour on airtight container keep in fridge.

Geda Khichdi

Geda is a yummy khichdi originates from Bengaluru. if you are sick and doesn't like to eat anything else just make the Geda and eat it is a healthy dish also easy to make. Normally Geda is made as a soft version but you can make it as your choice.
 so lets start making Geda 




Prepare time 30 min 
Cook time 5 to 7 min
Serving for 3 to 4


Ingredients : 

1/4 cup rice 
1/4 cup Split green gram (moong daal )
1 Onion
 1tbsp Oil
1 Tomato 
Handfull curry leaves 
1 Green chilly 
Ginger garlic paste 1/2 tbsp 
Salt 1tsp or as per taste 
Tumeric pwdr 1tsp 
Boiled chicken pieces (optional ) 
Water 1 glass
Coriander leaves for garnishing 


How to make : 

1. soak the rice and daal for 30 min.


2. Heat oil add onion cook for 2 min.


3. add tomato chopped and curry leaves in it. 


3. Add gg paste saute for 2 min. Add green chilly chopped or sliced turmeric pwdr and salt mix very well.


4. add a glass of water in it, let it boil the water. 



5. When water is start boiling add soaked rice and daal in it . close the cooker lid take 2 whistles then switch off the gas flame.


6. It's done take out in a bowl.


7. Garnish the Geda with coriander leaves and serve hot.
