Red Velvet Cake Recipe

' A Recipe has no Soul . You, as the cook must bring Soul to the Recipe'. 

This is a very very soft , moist , creamy and perfect Red velvet cake. With perfect texture.
Another very delicious cake recipe from chef Shahid Jinabade . Red Velvet Cake. It's really very yummy cake must visite and try. 






Ingredients:
For the cake:
2½ cups (310g) all-purpose flour 2 tablespoons (16g) Cocoa powder 1 teaspoon Baking soda 1 teaspoon Salt 1½ cups (300g) Sugar 1 cup (240ml) buttermilk, room temperature 1 cup – 1 tbsp (200g) Vegetable oil 1 teaspoon white Vinegar 2 Eggs 1/2 cup (115g) butter, room temperature 1-2 tablespoons Red food coloring 2 teaspoons Vanilla extract
For the frosting:
1¼ cups (300ml) Heavy cream, cold 2 cups (450g) Cream cheese, room temperature 1½ cups (190g) Powdered sugar 1 teaspoon Vanilla extract


Directions How to make :
1. Preheat oven to 350F (175C). 2. In a large bowl sift flour, cocoa powder, baking soda and salt. Stir and set aside. 3. In a separate large bowl, beat butter and sugar until smooth. Add eggs one at the time, beating until combined after each addition. Add oil, vinegar, vanilla extract, buttermilk and beat until combined. Gradually add the dry ingredients and mix after each addition until well combined. Add food coloring and mix. 4. Pour the batter into two 8-inch (20cm) round baking pans greased with butter and dust with flour. or you can use one pan and bake twice. Also you can use springrorm pan lined with parchment. 5. Bake 35-40 minutes, until a toothpick inserted into the center comes out clean. 6. Cool the cakes in their pans on a wire rack for 10 minutes. Release from the pan, then let cool completely. 7. Make the frosting: in a large bowl, beat cream cheese with powdered sugar and vanilla extract. Beat until smooth and creamy. In a separate bowl with heavy cream to stiff peaks. Then fold into the cream cheese mixture. 8. Cut the top of the cakes. Cut 8-12 heart shapes from the top layer of the cakes. Make crumbs from the leftovers. Set aside. 9. Place one cake layer with flat side down. Spread a layer of frosting, place the second layer of cake on top of the frosting, flat side up. Spread evenly the frosting on top and sides of the cake. 10. Decoration: Decorate the cake with the crumbs and the hearts. 11. Refrigerate for at least 2-3 hours before serving.

Notes:
• All cake ingredients should be in room temperature • You can use all-purpose flour or cake flour • Instead of buttermilk you can use milk+1 tablespoon vinegar (mix and let stand 5-10 minutes).

Perfect Vanilla sponge cake Recipe


Today I'm going to share very delicious and perfect Vanilla sponge cake from my brother in law's kitchen . He is a very talented chef specially in baking . So let's start making perfect Vanilla sponge cake like Bakery  cake. And name of this talented chef is 'chef shahid Jinabade'






Prep time : 15 min
 Cook time :35 minutes
 Total time : 50 minutes
 Serving for :  12 slices

Ingredients : 


  • 200 grams cake flour
  • 200 grams granulated sugar
  • 1/2 tbsp baking powder
  • 1/2 tsp salt
  • 115 grams unsalted butter room temperature
  • 125 mL milk 3.25% fat, divided
  • 2 large eggs
  • 1 large egg white
  • 1 tsp vanilla

Instructions:


  1. Preheat the oven to 350°F. Prepare an 8-inch pan by greasing and flouring it, then lining it with a parchment round. Set aside for later.
  2. In the bowl of an electric mixer fitted with the paddle attachment, combine all the dry ingredients.
  3. Beat in the butter til the flour mixture forms a sandy texture. Then add half the milk, and beat the mixture til it’s smooth (about 1 minute)
  4. Meanwhile, combine the other half of the milk with the other wet ingredients (eggs and vanilla) in a large glass cup measure (or bowl with a pouring spout).
  5. Add half the liquid mixture to the mixer bowl, and beat for about 20 seconds, then add the rest, and beat again for 20 more seconds on medium.
  6. Transfer the cake batter to the prepared pan and smooth it with an offset spatula. Tap the pan on the counter a few times to get rid of any air bubbles.
  7. Bake the cake til a cake tester inserted in the center comes out clean (about 35 minutes).
  8. Cool for 15 minutes before flipping the cake out of the pan onto a wire rack to cool completely.

Easy Fish Curry Recipe



There are so many types of Fish curries found around us . Like ,
'Malabar Matthi Curry' ( Indian Fish curry) , 'Fish head curry' (this is a Singaporean dish) , 'Macchar Jhol' also spelled 'Macchar Ghonta' (this is a Bengali and Oriya fish curry) , 'Mas Hira' (this is Maldivian Fish Curry) and 'Malu Mirisata' (a fish curry derived from Sirilanka) .

Today I'm going to show you how to make easy Fish Curry with coconut and tamarind.
This curry is very easy to make, but very delicious in taste . This type of fish curry comnly made in my village Kudachi from
Karnataka .



Prep time : 30 min
Cooking time : 10 min
Total time : 40 min 
Serving for : 5 to 6

Ingredients : 

Fish pieces - 1 kg 
Dried coconut - 1/2 piece
Ginger garlic paste -  1 tbsp 
Coriander leaves- hand full 
Tamarind  pulp  -  1/2 cup
Red chilly powder - 2 tbsp or as per taste 
Salt - 1/2 tbsp or as per taste
Tumeric powder - 1/2 tsp 
Chopped onion - 1/2 nos. 
Oil - 2 tbsp 
Garam masala - 1/2 tsp 
Water - as required 


How to make :

1. In mixy jaar add sliced dried coconut , Ginger Garlic paste , coriander leaves . Grind it , add little by little water in between  make fine coconut paste .

2. Soak tamarind in water for half an hour , with your hand squeeze the pulp from tamarind, strain it and keep aside. 

3. Wash the fish pieces drain the extra water from it  and take out the fish pieces in bowl, add coconut paste , Tamarind pulp , chilly powder , salt and tumeric powder  mix well keep aside for 30 min . 

4. After 30 min add oil in pan when oil is heating up add chopped onion in it fry onion till golden brown in colour, then add marinated fish mix well with light hand cook for 5 min . Then add water mix with light hand add garam masala mix well close the lid cook for 5 min the switch off the flame.

5. Garnish with coriander leaves , serve hot with Jowar Roti and Rice .

*Make this curry spicy .

 * This fish curry is spicy curry, if you don't like to eat spicy curry you add red chilly powder as required. 

* Eat this fish curry with Jowar Roti .

Kanda bhajji Recipe

Kanda bhajji ( Pyaz ke pakode ) for beginners

Rainy season has started . My Family members demand for 'Kanda bhajji and Masala tea'. So I maked Kanda bhajji for them , which is very yummy and crispy like street food style Kanda bhajji . I'm going to share my simple and easy but crispy kanda ( onion ) bhajji or bhajiya recipe with you.

Tea Masala powder



Prep time : 10 min 
Cooking time : 10 min
Total time : 20 min 
Serving for : 4 to 5 

Ingredients : 

Big size onion( Kanda , pyaz ) - 4 nos
Gram flour ( Besan ) - 1 cup 
Salt - 1/4 tbsp or as per taste
Red chilly powder - 1/2 tbsp or as per taste 
Tumeric powder - 1/2 tsp 
Amchur powder ( optional ) - 1 tsp
Baking soda - 1/2 tsp 
Chopped coriander leaves - hand full 
Water - 1/4 cup 
Oil - for frying 
Tomato ketchup - for serving 

How to make : 

1. Cut the onion sliced . Take out it in big bowl , add salt , red chilly powder , tumeric powder , amchur powder, baking soda, chopped coriander leaves ,gram flour and water . Mix all ingredients very well and keep aside.

2. Heat the oil in pan on high flame .fry the bhajiye in medium to high flame till golden brown in colour and crisp. 

3. Serve yummy and crispy bhajiya with tomato ketchup. 

Sana's note : 

1. If you bhajiye batter is so thin add some gram flour and make thick batter for bhajiya . 

2. If you like you can add or skip ajwain.

3. Fry on medium to high flame not on high flame .
